After buying fresh fatty intestines, turn the intestines (the fatty intestines we usually see are actually turned once in the slaughterhouse. The smooth side is the inner wall of the intestine, and the oily side is the outer wall of the intestine. This oil is also called intestinal oil, which is the link It is used for pig intestines and other organs. Our purpose of turning the intestines now is to remove excess intestinal oil and dirt. This step is necessary, otherwise the pig intestines will never be cleaned.

Intestine turning starts from the thick end, a bit like we usually roll up our sleeves. You can pour water into it when you turn it over to about 10cm. Using the gravity of the water, you can easily turn the whole intestine over.

After turning it over, the intestinal oil and all kinds of filth can be seen at a glance. When removing the intestinal oil, you can keep more heavy flavors according to your own preferences. If you don’t like greasy, you can keep less. It is not recommended to remove all of the intestinal oil. It won't taste good if you clean the fat intestines. After cleaning the filth and intestinal oil, refer to step 2 to turn the fat intestine back so that the smooth side is facing out and drain the water.

Add salt to the fatty intestines after turning it over (you can add more. Adding salt at this time is to facilitate the cleaning of the fatty intestines instead of giving them a taste)

Add some vinegar (I usually use red vinegar. If there is no red vinegar at home, you can use white vinegar. It is not recommended to use ordinary vinegar, because ordinary vinegar will darken the fatty intestines and affect the appearance of the dishes)

After adding vinegar and salt, we can massage the fatty intestines until the hands feel greasy.
After a few minutes of massaging the fat intestines, you can wash it off with water.

After washing, the fatty intestines should not have salty and vinegar tastes (repeated water changes can be done)

After washing the fat intestines, boil water in a pot under cold water (add ginger, pepper, white wine)
