Spicy Fried Chicken Neck.

Wash the chicken neck and cut into small pieces.

Add water to the boiling pot, boil the green onion and ginger slices, and blanch the chicken neck slightly to remove bloody impurities.

Take out the blanched chicken neck and set aside.

Chop the green onion, ginger, garlic, dried chili, pepper, star anise and set aside.

Heat oil in a bottom pot, add star anise and pepper to fragrant, then add dried chili.

Pour in the chopped green onions, ginger, and garlic.

Pour the chicken neck and stir fry.

Add the oyster sauce and fry for two or three minutes, then add the soy sauce to color, and then pour the cooking oil.

Then add salt, water and simmer for 10 minutes.

Collect the juice and add the green pepper.
