Spicy Jelly

Ingredients: pork rind, salt, star anise, ginger, soda vinegar soy sauce, vinegar, pepper, pepper, garlic, chili oil, sugar

Wash the pigskin

Add the star anise fragrant leaf ginger to the water and cook until it can be easily passed through with chopsticks and then turn off

Let the pig skin cool, and use tweezers to pull out the remaining pig hair and scrape off the grease

Put it in hot water with 1 tablespoon of edible alkali and 1 tablespoon of vinegar, and wash it several times to remove the residual oil residue in the process of scraping grease.

Cut the washed pigskin into thin strips with a knife

Put it in the clean water that hasn’t passed two fingers of the pigskin and cook again. Bring to a boil on high heat, and simmer for about 1-2 hours on low heat. Add salt and boil again.

After the pigskin soup is cool, put it in the prepared pot, cover the pot with plastic wrap and put it in the refrigerator’s freezer overnight.

Pour the garlic into a puree with a garlic masher, put it in a bowl, add pepper powder, pepper powder, vinegar, light soy sauce and white sugar, mix well, pour it on the cut skin jelly, and pour the chili oil.
