Spicy Octopus

The hairtail is cleaned and drained. Frozen hairtail must be thawed in advance, and the internal organs in the stomach must be cleaned when washing the hairtail;

Cut the cleaned hairtail into 5cm-long sections and put them in a large clean bowl, add shredded ginger, a little salt and a few drops of cooking wine, mix well and marinate for about 10 minutes;

Cut the cleaned green onion, beauty pepper, and green onion into sections separately;

After the octopus is marinated, it is placed in a flour pan and coated with a thin layer of dry powder;

Turn on the gas stove, pour in a little cooking oil after the pan is heated, and then put the octopus wrapped in dry flour and fry slowly;

Wait for one side to fry until golden brown, turn it over with chopsticks, and continue to fry the other side after turning it over;

Wait for both sides to fry until golden brown, and take it out for later use;

Use the frying octopus pan and pour a little cooking oil. When the oil is warm, put the green onions and stir-fry slowly;

After smelling the scent of fried green onions, add bean paste and stir fry together;

Stir-fry for a while and add appropriate amount of water. It is recommended that the amount of water is less than that of hairtail. When adding it, add enough water at one time. It is not recommended to add it halfway;

After the broth in the pot is boiled, add the octopus that has been fried in advance, cover the pot and simmer on low heat for about 10 minutes;

When the soup in the pot is ready to dry, sprinkle with beauties and green onions and continue to cook for about 1 minute, turn off the heat;
13.
Sprinkle a little green onion leaves on top of the pan.
Tips:
1. The octopus is salted before frying, and it tastes more flavorful;
2. The salty taste of bean paste is heavy, so the amount of salt should not be too much when marinating the octopus, otherwise the taste of the prepared octopus will be heavy;
3. Fry the octopus, keep a low heat throughout the whole process, and fry slowly and patiently. Don't be impatient. If you are too anxious, it will fry and crack the skin.
