Spinach Noodles with Egg Sauce

Prepare the ingredients, wash the spinach, and press the noodles yourself (or buy ready-made noodles, it’s okay if you don’t have noodles)

Spinach cut into sections

Scallions, chopped green onions, chopped peppers, beaten eggs

Heat vegetable oil in the pot, pour the egg liquid when it smokes, and spread it out into egg pieces

Add chopped green onion and chili and stir fry until the chili tastes spicy

Add water, add the soybean paste (the amount of sauce is added or subtracted according to personal taste, no need to add salt for the sauce)

Bring to a boil, medium heat until the sauce is a little thick, then turn off the heat and get out of the pot

Boil the water in the pot and cook the noodles. The cold water noodles will be cooked after three times of boiling. When the last one is boiling, put the spinach. Finally, according to personal preference, you can pick it up directly or over the water. When eating, just pour the marinade and mix well.

1 The amount of spinach is arbitrary. You can choose small rapeseed or milk cabbage as the vegetable, as long as you like it.
2 If you don’t like spicy peppers, you can replace them with green peppers or omit them
3 Soy sauce as long as it is salty
