Steamed Fish Head with Chopped Pepper

Wash the head of the big head fish with dry water, shred the ginger and chop the red and yellow peppers for later use.

Spread the scallions and ginger on the fish heads. After the water is boiled, put them in a steaming dish and steam them for 3 minutes.

After 3 minutes, take out the dish with anti-scalding clips, and pour out the steamed juice.

Pour the fish head with clean water and turn it over, add a little peanut oil, and evenly spread the red and yellow chopped peppers on the fish head, then put it in a pot and steam for 6 minutes.

Turn off the heat after 6 minutes, pour a spoonful of light soy sauce, sprinkle some chopped green onion, cover and simmer for 1 minute.

Tips:
The water for the first steamed fish head should be drained because the muddy smell, fishy smell and bloody water should be removed first. The whole menu is not salted because the chopped pepper is slightly salty, and the fish head is steamed for the second time. Add a spoonful of light soy sauce to taste better when you top it with chopped peppers. The steaming time depends on the size of the fish head, but the juice from the first steaming has to be poured out, and the time is about 3 minutes.
