Steamed Golden Needle Squid Rings

Prepare the required materials;

Mince ginger, mince garlic, mince scallion white, mince scallion green, and cut into sections; shred pepper;

Cut off the roots of Flammulina velutipes and wash;
4.
After the squid is peeled and processed, cut into circles;
5.
Boil water in a pot, blanch the squid for a while, remove and drain;
6.
Add some oil to the small pot, add the green onion, ginger, and garlic until fragrant, turn off the heat, then add salt, light soy sauce, oyster sauce, vinegar, sugar and chicken essence;
7.
Enoki mushrooms are placed on the bottom of the plate, with squid rings on top;

Pour the mixed juice on top;

After the water in the steamer boils, put it on high heat and steam for 5 minutes;

Finally, sprinkle shredded green onion and red pepper, boil some hot oil and drizzle on top.
Tips:
a. Do not blanch the squid for too long, just 3-5 seconds to keep it fresh and tender;
b. Flammulina velutipes can also be blanched before steaming, at will;
c. The ingredients of steamed vegetables are fresher, and I personally feel that the flavors are lighter and taste better.
