Steamed Hairy Crabs

Soak the hairy crabs in clean water for 2 hours, wait for the crabs to remove the dirt by themselves, and then brush them with a toothbrush for later use.

Add cold water to the steamer, add ginger slices, then pour 3 tablespoons of cooking wine with the crab belly facing up, and add the hairy crabs. (When steaming crabs, do not untie the rope that binds the crabs to prevent the crabs from crawling off their legs and turning yellow after being heated.)

Put the basil in the bag, cover and steam on medium-high heat for 15-20 minutes, then it will be out of the pot. (The length of steaming depends on the size of the hairy crabs. Perilla is a Chinese medicinal material that has the effect of fighting cold and removing fishy. If perilla is not available, ginger can be used instead.)

How to eat hairy crabs: Cut off the eight legs of hairy crabs, including two tongs. (The meat in it will automatically separate from the crab shell after it is cooled, and it is easy to be smashed out or even sucked out, so save it for the last to eat.)

Use the tip of the last crab to poke out the crab legs.

Remove the crab cover (that is, a small piece of cover on the belly button of the crab, male and female crabs have different shapes), and lift the crab cover.

Eat the crab cover first, scoop out the middle part of the crab stomach with a small spoon, and gently suck the crab roe on the outside. Be careful not to suck the crab stomach that has a triangular cone shape in the middle, it should be discarded.
