Noodles and Castanopsis chinensis are Shanxi's specialty delicacies. They are made with noodle flour and into a dough, divided into small doses, rolled into pieces by hand, and steamed to eat, usually with some toppings. The noodles are very fragrant, and the unique small rolls made make it easier to retain the sauce in the toppings, which is very delicious!

1. Prepare the materials

2. Take an appropriate amount of naked flour and put it in a large bowl

3. Add some freshly boiled water

4. Knead into dough

5. Take a small piece of dough and knead it

6. Divide into small doses, knead round one by one and roll up flat (see video for details)
