Stewed Chicken with Mushrooms

Pull off the remaining hairs of free-range chickens and wash them;

Shiitake mushrooms are ready;

Chop the chicken into suitable small pieces;

Wash the shiitake mushrooms to remove impurities, soak them in warm water. The soaked water does not need to be drained and can be used to stew chicken;

Slice ginger, peel garlic, wash dried red pepper, aniseed and cinnamon;

Put an appropriate amount of oil into the pot, add all the auxiliary ingredients in step 5 and saute until fragrant;
7.
Pour the chicken nuggets and stir fry until the color changes;

Put in the soaked shiitake mushrooms, mix in sugar, cooking wine, soy sauce and salt, and mix the colors evenly;

Pour the water that soaked the mushrooms just now, the amount of water should be enough to cover all the ingredients, simmer on medium heat for about 30 minutes, and finally collect the juice on high heat;
10.
Put it into a large bowl and remove it from the pot.
Tips:
1. The water used to soak the mushrooms does not need to be drained, it can be used to stew chicken, and the flavor of the mushrooms is stronger;
2. When stewing chicken, the amount of water poured in should not exceed all the ingredients in the pot, too little is easy to dry.
