Stewed Duck with Yam
1.
Clean the old duck first, then chop it in half, soak the blood in clean water, rinse and drain the water.
2.
Prepare the beer, peel and slice the ginger, wash the shallots and cut into sections
3.
Pour clean water into the pot, put the duck in the pot with cold water, blanch it, and rinse it off
4.
In another soup pot, add the duck, pour in a bottle of beer, pour in clear water, the amount of water is more, then add the ginger and green onions, cover the high heat, bring to a boil, turn to low heat and simmer for about 1 hour
5.
After 1 hour, the yam is peeled and washed and cut into hob pieces. The scallions are washed and cut into chopped green onions. After peeling, the yam will turn black, so wait until it is put into the pot before peeling it and washing it directly into the pot. You can save the step of soaking in clear water
6.
Turn to high heat and add yam to boil, then turn to low heat to cover and cook yam softly
7.
Then add salt to taste and turn off the heat
8.
Pour into a bowl and sprinkle with chopped green onion and enjoy
Tips:
There is no certain time for the stewing, it depends on the age and tenderness of the duck
