Stir-fried Andrographis

The old leaves and stems of Andrographis paniculata are selected and soaked in light salt water for about 15 minutes. The main purpose is to remove the bacteria in it, and then repeatedly clean it.

The cherry tomatoes are also soaked in light salt water for about 15 minutes, and then cleaned.

Slice the cherry tomatoes, peel the garlic, wash and pat finely, and then cut everything.

Add some olive oil to the wok, sauté a little minced garlic, add the tomato slices and stir fry.

Add Andrographis paniculata and stir fry quickly. Andrographis paniculata is crisp, just stir-fry for a few times. Don't stir-fry, otherwise the taste will not be good.

Stir-fry it to change the color, add the remaining minced garlic and salt to taste.

Take out the pan and serve.
Tips:
1. To make andrographis dishes, ginger, garlic, and vinegar are indispensable. Choosing any one or two of the dishes will reduce the bitterness and earthy smell. Adding vinegar can facilitate the preservation, digestion and absorption of vitamin C.
2. Stir-fry andrographis, as light as possible, with olive oil to taste better. It needs to be quickly stir-fried on high heat, and it will be out of the pot when the color changes. Don't fry it, otherwise the taste will not be good.
