Andrographis Three Cup Chicken

Chop the chicken legs and wash them, put them in a pot of cold water, boil, skim off the foam, cover, and cook for about 5 minutes.
Wash andrographis and cut into long pieces.

Wash the colored peppers and cut into pieces.
Cut the onion, garlic and ginger into slices.

Mix cooked soybean oil and black sesame oil.
Pour the mixed oil into the wok, add ginger when the oil temperature is slightly higher, fry for a while, add onion and garlic, and stir fry.

Add the chicken nuggets and stir fry.
Add rice wine, light soy sauce, dark soy sauce, rock sugar.

Stir-fry, cover, low heat, and cook for about 10 minutes.
Collect the sauce over high heat, add the colored peppers and stir fry.

Put it out and put it in a heated stone pot, pour in sesame oil, mix well, and put on Andrographis paniculata.
Cover the lid and simmer for about half a minute before serving.
Tips:
1. Boil chicken drumsticks with cold water in the pot, the meat will be tight when boiling water in the pot.
2. After putting the oil in the pot, do not wait for the oil temperature to rise before adding ginger. Black sesame oil is not suitable for heating at too high oil temperature. After putting the oil in a few seconds, put the ginger on the medium temperature.
3. If the rice wine used is sweet rice wine, the amount of rock sugar should be small or not put.
