Stir-fried Bean Mouth with Shredded Pork with Vermicelli

Wash the soybeans, soak them in cold water overnight, and remove the bad beans and worm beans.

Put the soaked soybeans in a drainable basket, cover with a damp cloth, and put them in a ventilated place. Drain them with water three times a day. After two days, they will appear as shown in the picture.

Wash the lean meat, shred it, add cooking wine, oyster sauce, pepper and sweet potato starch, stir well, and marinate for 10 minutes.

Cut the sweet potato vermicelli into suitable lengths and soak in boiling water until there are no hard cores.

Bring water to a boil in the pot, add the marinated shredded pork, do not stir, wait for about half a minute, then gently stir with chopsticks, blanch it, remove, and drain the water.

Cut the green onions and chopped green onions, prepare an appropriate amount of dried pepper, if it is spicy, you can prepare a little dried chili.

Tips:
1. The weather is too hot. Soybeans have grown sprouts in two days. It is best not to exceed three days, otherwise they will easily break.
2. Do not see the light when the bean sprouts are sprouts, otherwise the mung bean sprouts will turn red and have a bit bitter taste; the soybean sprouts will turn green, but the taste is the same.
