Stir-fried Bean Sprouts

Ingredients: bean sprouts, dried chili segments, green onions, small red peppers (forgot to shoot).

Cut the bean sprouts into inch sections, separate the bean stems from the bean sprout leaves, and cut the green onions into the green onions. (The watercress onion is first cut into four pieces along the length of the onion, and then cut into small pieces horizontally.)

Tips:
The stems and leaves of the bean sprouts will not mature at the same time, so stir fry the stems first, then add the bean sprouts leaves, and stir-fry for a while to get out of the pot.
