Stir-fried Bean Sprouts with Leek

The bean sprouts are pinched to remove the roots by hand, and then cleaned to control the moisture.

Remove the bad leaves of the leek, clean it, and cut off the head about 2mm. This is to prevent the sand on the head from being washed out, which will affect the taste and become unhygienic. Then cut it into 1 inch long sections.

Prepare the condiments, mince green onion and mince ginger.

Put the amount of edible oil in the pot. After the oil is hot, put the pepper and aniseed to saute, then add the chopped green onion and ginger.

Then put the bean sprouts in the pot and stir fry quickly, so that each bean sprout sticks to the oil, when the bean sprouts start to change, put a spoonful of salt and continue to fry.

Add half a small bowl of water, close the lid, and let the bean sprouts soften and become ripe.

Finally, pour in the leeks and stir fry. Before serving, add a little rice vinegar to make it taste better.
Tips:
1. Bean sprouts are not easy to cook, so they should be fried first, and it is best to add a little water to simmer. The leeks are easier to cook, so the cooking time should not be too long.
2. Add a little rice vinegar before serving to improve freshness and taste better.
