Stir-fried Chicken with Hot Peppers

1Remove the chicken kidneys, cut a flower knife, slice the chicken liver into thin slices, cut the chicken intestine into 10 cm sections, slice the chicken heart with a rolling knife; cut green and red peppers, onions, garlic and ginger into small pieces, and green onions into sections.

Add oil in a hot pan, stir-fry the chicken offal, and pour out the water.

Add oil in a hot pan, fry fragrant ginger and garlic, add chicken gizzards, peppers, and onions and stir fry.

Add seasonings, onions and green onions.

Tips:
Chicken kidneys should be cut off with a white cut knife, and chicken livers should be as thin as possible so that they are easier to cook. Blanching water can make the chickens more susceptible and remove blood impurities.
