Stir-fried Lamb with Scallions

Slice the lamb, add salt, cooking wine, light soy sauce, and pepper to marinate for a while.

Change the scallion to an oblique knife.

Shred the ginger, remove the seeds of the dried chili and break into pieces.

Heat the pan with cool oil, add the lamb slices, and spread them out. Put more oil, slightly more oil than usual for cooking.

Add ginger and chili to the lamb slightly discolored.

Immediately add green onions and stir fry over high heat.

Add a little salt and light soy sauce to the pot. Stir-fry the meat in one go, otherwise the lamb won't taste good when it gets old.
