Stir-fried Lamb with Scallions

First of all, we have to prepare all the ingredients needed to make this [Scallion Lamb]: 250g mutton, 1 green onion, 1 egg, 10g ginger, and 10g dried chili. First peel the green onions and wash them, then wash the lamb and drain the water for later use.

Remove the fascia and cut the lamb into slices. Add 30g of egg liquid, 1g of salt, 0.5g of pepper powder, and 5ml of cooking wine in a bowl, then marinate for 15 minutes; then cut the green onion into slices and cut the ginger into slices. Cut ginger and dried chili into sections.

Heat a wok on medium heat until palms are hot. Pour 20ml of peanut oil. Turn to high heat until the oil is hot. Add chopped green onion, ginger and dried chili until fragrant. Add the marinated mutton slices and loosen them. Take an empty bowl and mix in: 5ml light soy sauce, 1g white sugar, 1g starch, and 10ml drinking water, stir well and set aside.

Stir fry until the mutton slices change color, pour in the seasoned sauce, stir fry evenly, and add the sliced green onions.

It can be out of the pan after being quickly stir-fried evenly.

A plate of fried lamb with oily color and rich green onions is ready.
Tips:
1. If you don't like to cut lamb, you can also buy lamb slices for shabu-shabu.
2. Add appropriate amount of pepper powder when marinating lamb to relieve the mutton smell. If you don’t have pepper powder at home, you can also use pepper or five-spice powder instead.
3. When marinating the mutton, put in an appropriate amount of egg liquid and marinate well, so that the fried mutton is not only fresh, but also tender and juicy.
4. When frying, stir fry on high heat, so as to ensure that the lamb is tender and smooth.
