Stir-fried Lamb with Scallions

Ingredients: mutton (I bought ready-made mutton slices), green onions, garlic

Prepare a pot of boiling water, put the lamb slices in the pot, stir them with chopsticks, don't wait for the water to boil, just take them out quickly and set aside

Divide the green onion into white, green onion leaves, cut the white part into hob pieces, and cut the green onion leaves into sections

Bowl of juice: add light soy sauce, cooking wine, dark soy sauce, vinegar, sugar, oyster sauce, salt, add sliced or crushed garlic, add water, add starch, mix well and set aside

Tips:
For this kind of stir-fried lamb, it is best to cut the meat thinly. To save trouble, I bought the shabu-shabu meat. Lamb should be half fat and half lean.
