Stir-fried Lamb with Screw Pepper

Cut the mutton into slices and place on a plate, add some light soy sauce, cooking wine, and pepper to marinate for about 15 minutes.

Cut green and red peppers into shreds and place them on a plate.

Put the scallion, ginger and garlic in the pot to fragrant. Add the marinated mutton and stir-fry. The heat is not too high. When the mutton is almost dry, add the shredded chili, light soy sauce, and oyster sauce, and then remove it from the pot.
Tips:
1. Put the cooking wine, light soy sauce, and pepper to marinate the lamb more tender and delicious, the cooking wine can remove the fishy, the pepper can improve the flavor, and the light soy sauce is delicious.
2. Fry the freshly cooked lamb on high heat to lock the moisture, and then turn to medium and low heat to fry, so that the fried lamb will not grow old.
