Stir-fried Rapeseed Heart

Only the tenderest part of the rape heart is left, and one section is removed. Wash and set aside.

Put vegetable oil in a cold pan, add the dried chili section when the oil is 40% hot, reduce the heat to a minimum, stir up the aroma, if the oil temperature is too high, use the dried chili to paste.

After sautéing the aroma, turn the heat to the maximum, add the washed choy sum, stir fry a few times, add salt, and sprinkle some chicken essence to get out of the pot.
