Knock Shrimp and Tofu Soup

Rinse the purchased bean curd with water, then cut into thick strips

Rinse it in boiling water and soak for 5 minutes (can remove fishy) and remove it for later use

Soak the meat slices in boiling water (to remove the fishy and also make the meat more tender.)

Wash the rape heart and set aside
5.
Shrimp de-sanding line is cut from the back (do not cut)

Marinate with white pepper and salt for 5 minutes and wipe off the moisture on the surface of the shrimp with kitchen paper

Pour cornstarch on the chopping board and place the shrimp on it

Sprinkle some starch on the shrimp

Use a rolling pin or bottle to repeatedly arrange and beat the shrimp evenly

Beat into thin prawn crackers (the thinner the better)

Add chicken broth and sugar to the pot and cook until it tastes delicious (the chicken broth I used is flavorful, and chicken powder can be used if it doesn't)

Add the shrimp slices and boil them

Finally, add the meat slices and choy sum, and the choy sum can be eaten when it becomes wilted (you can add some sesame oil)
Tips:
1. Chicken broth will taste very fresh. If you don't have it, you can use chicken powder or water, but the taste will be reduced.
2. After blanching the bean skin and meat slices with boiling water, it can remove the fishy smell and make the meat slices tender.
3. You don't need to add too much sugar in the soup, just a little bit, which can improve freshness.
