1. Boil the frozen scallops with boiling water and immediately remove them for later use.
2. Shred the cucumber.
3. Shred the green pepper.
4. Cut the green onion, ginger, and chili.
5. Put oil in the pot and fry the chives, ginger and chili.
6. Add the scallops and greens.
7. Add appropriate amount of salt and chicken essence, a little cooking wine, and stir fry evenly.
