Seafood Pimple Soup

Wash the clams and set aside. To buy clams, you must choose to spit out the sand. I usually go to the familiar stalls. The seaside cities sell all the spit out clams. Don't worry about getting the sand. If the clams you bought contain silt, just look down.

Cut the shiitake mushrooms into thin slices, soak the fungus and cut into shreds, and cut the tofu into small pieces. Choose the type of vegetables that you and your family like.

Scallop rim is a very cheap ingredient by the sea, but it tastes delicious, soak it for a while to wash off the mud and sand.

Cut tomatoes into small pieces. Pimple soup is specially matched with tomatoes, which is delicious and nutritious. Pimple soup comes standard.

Shred the ginger, shred the green onion, separate the coriander root and leaves, cut the stem into small pieces, and tear the leaves into small pieces.

Now start doing pimple. Beat an egg into a bowl, and then add about 200 grams of flour, which is enough for 2 to 3 people.

Use chopsticks to stir into small noodles, as shown in the picture. Adjust the amount of flour according to the size of the egg. Don't be too dry or too wet. Too dry will make a batter soup. If it is too wet, the lumps will be too big and difficult to cook. Only use eggs to make pimple, don't need a drop of water.

To treat the clams, add water to a boil in a soup pot, add the clams to a boil and cook for about 1 minute, until the clams open. If the clams you buy have sand, take out the clam meat and rinse to wash out the sand. Don’t throw away the clam soup, it will be used later.

Heat the wok, add the oil, add the green onion, ginger, coriander root in the cold oil in the hot pan and stir fry for a while, fry the aroma.

Add the tomato chunks and fry until a paste. Add five-spice powder and salt to taste.

Then add shiitake mushroom slices and fungus shreds, stir fry and add to the soup like the clams just cooked, if it is not enough, add some water and bring to a boil.

Add in the pimple you just made, and stir as you add it, until the pimple size is even after mixing.

Cook for 5 about 5 minutes, add clams and scallops, and cook for another half a minute.

Add coriander leaves and stir well, then drizzle in a little sesame oil. The pimple soup that warms the stomach and is super satisfying is ready.
Tips:
1. Don't cook clams too old, they will lose their flavor after a long time. Cook it until it opens, and the clams that can't be opened are stale clams, so don't eat them.
2. The vegetables in the pimple soup just choose what you like. I like to put more vegetables in several colors. The soup will be more beautiful and more appetizing.
3. The pimple soup will become viscous until the end is cooked, so keep stirring it to avoid burning.
