Strawberry Mousse Cake

First, let's have a cake base. The mousse cake is either a cake slice or a biscuit base. Cut two slices of cake, and cut one slice into a smaller circle. Look where you put it below.

Yuzi mom made the chocolate cake base as the base. For the method, please refer to the video: Spinach cake. If you want to be simpler and more time-saving, use biscuits to break the base. For the method, please refer to the video: Blueberry Mousse.

Start making strawberry mousse layer~ For the gelatin powder used by Yuzu Mom, if you use gelatine flakes, soak the gelatin flakes in cold water first. The following steps are the same.

200g strawberries are diced and diced.

Make a paste with a food processor.

Heat the strawberry paste on a low heat, the heating temperature should not exceed 50 degrees, then add gelatine powder (or soaked gelatin flakes), and stir until the mixture is uniform.

Take out the whipped cream in the refrigerator, add 280g of whipped cream to 32g of powdered sugar. (The taste of whipped cream brand grapefruit mom is better: blue windmill and iron tower)

Send it to a slightly viscous state, so that lines can appear, so don't beat it.

Pour in the cooled strawberry paste and mix well~

Put the bottom of the cake in the mold.

Remove the stems and cut the strawberries in half, and place the strawberry section close to the mold wall.

Pour half of the mousse paste.

Shake well, put in another smaller piece of cake, then pour in the remaining mousse paste.

Put it in the refrigerator for more than 4 hours. (Because my mousse was ready to demould and slice the cake, it took some time. The mousse has slowly solidified at room temperature of 5 degrees, so the surface is not very smooth.)

After 4 hours, take it out of the refrigerator, blow the mold wall with hot air on the hair dryer, and gently remove the mold.

Decorate the surface~ Heat the whipped cream and pour in the chocolate, stirring constantly until it is fully integrated. This one is ready: Chocolate Ganache. After cooling, pour it into a piping bag for decoration.

It looks like it is cut up~ it's light pink, it may not be as red as the strawberry mousse in the cake room, but this is healthier, isn't it~~~ After making it, you can put it at room temperature and give it to your baby.
