8.
Wash the strawberries, soak them in salt water for half an hour, cut into small pieces, add 5 grams of corn flour, and use a food processor to make a sauce (you can fry the corn flour first)
9.
Pour the strawberry jam into the cold custard and stir well
10.
Mix with the whipped cream, stir well, and freeze in the refrigerator. Take out every half an hour and stir once. Stir about 3-4 times and freeze in the refrigerator for more than 3 hours.
11.
The sweet and sour strawberry ice cream is ready (this is made of real fresh strawberries, the finished product is just a faint pink)
12.
Chocolate ice cream, eliminating the need to beat the jam, directly add 200 grams of dark chocolate (it is pure chocolate, not chocolate powder) when cooking the custard, and stir it together evenly. Since the chocolate is thicker, there is no need to add corn flour.
Tips:
1. When boiling the custard (or chocolate custard, if it is chocolate-flavored), be sure to make a small fire to prevent it from boiling, and keep stirring. When the custard wants to make small bubbles, turn off the fire. The custard will become thicker as it cools.
2. Add a few drops of vinegar to remove the fishy smell of the egg yolk.
3. Add a little corn flour to the preparation of strawberry ice cream, because the strawberry has more water and the corn flour has a thickening effect. The chocolate flavor is thicker because the chocolate itself does not need to be added.
4. The amount of sugar depends on personal taste. Generally, the taste of frozen food will be numb. You can add more sugar according to your usual taste.
5. After putting it in the refrigerator, take it out several times and stir with an electric whisk to prevent the formation of ice ballast around and affect the taste.
