Sweet Potato Hair Cake

Prepare mashed sweet potatoes.

In addition, use 50 grams of warm water (not hot) to boil the yeast powder and let it rest for a while. If your sweet potato mash has more water content, you can use less warm water to mix with yeast powder.

Add flour, yeast water, mashed sweet potatoes, and another 50 grams of water to the cook machine and stir evenly. The water content of the mashed sweet potato is different. You can add a small amount of water first, depending on the state of the dough. The dough used to evaporate the cake is softer than steamed buns, and generally the water content accounts for about 70% of the flour.

The reconciled dough is rounded, covered with plastic wrap, and fermented in a warm place to 1.5-2 times its size.

The fermented dough is again stirred in the cook machine and exhausted. The fermented dough is relatively soft. There is no cook machine. You can rub some oil on your hands to prevent sticking and knead the dough, or you can use a silicone spatula to stir and exhaust. Then round it up, place it on a steamer, squash it slightly, and place it with some goji berries or red dates.

Put warm water in the pot and leave the dough to ferment for about half an hour. As shown in the picture above, it is bigger than the picture in step 5. After the second fermentation, boil a pot on the water and steam it on high heat for half an hour.
