The wife cake is a kind of traditional specialty in the Chaozhou area of Guangdong, which is made of sugar winter melon, wheat flour, cake powder, caramel, sesame and other ingredients as the main raw materials. It is the cake with the least materials, the simplest workmanship and the most well-known among Guangdong tide-style moon cakes. Originated from Guangdong Chaozhou Dim Sum Wife Cake, the outer skin is baked into an attractive golden color, and the layers of pastry inside are as thin as cotton paper, so crispy. When you bite it off, the crumbs fall all over the floor. You can taste honey in every bite. Sweet taste like sugar!

Sweetheart Cake

1. Prepare the ingredients for the wife's cake.

2. Pour all-purpose flour, lard, sugar, and water into the kneading bucket, turn on the kneading process and mix well.

3. Knead into a smooth dough, namely a watery oily dough, wrap it with plastic wrap and place it in the refrigerator to rest for 1 hour.

4. Put all-purpose flour and lard in the basin, mix well and form a dough.

5. Put the mixed shortbread wraps on the fresh-keeping film and put them in the refrigerator to let them rest for 1 hour.

6. Weigh all the fillings and put them in the basin.

7. Add hot water and stir evenly to form a dough.

8. Divide the filling into 24 portions.

9. Divide the loose oil skin into 24 parts.

10. Divide the loosened shortbread into 24 portions evenly.

11. Take a piece of oily skin, press flat, wrap a piece of oily pastry, and place it on the tiger's mouth on the left hand, turn the oily skin up while turning it, and finally pinch tightly to close the mouth.

12. Wrap all the oil skins one by one with the shortbread, and cover it with plastic wrap.

13. Take a dough and roll it into an oval shape and roll it up from top to bottom.

14. Make 24 servings one by one, and cover the whole process with plastic wrap.

16. Press the finished product of the second roll with your thumb in the middle, and use the tiger's mouth to clamp the pair of rolls.

18. Tuck the dough upwards, and finally pinch the closure repeatedly to prevent the meat from bursting out during baking.

19. After wrapping, close the mouth down, roll it into a round cake, and place it on a baking tray.

20. Use a knife to make three cuts on the surface of the dough.

21. Brush the surface of the dough with whole egg mixture and sprinkle with black sesame seeds.

22. Put it in a preheated 180 degree oven and bake for about 30 minutes until the surface is golden.

23. Slightly out of the oven.

Tips:

1. This recipe can make 24 wife cakes. The portion in my picture is a bit too much.
2. If there is no cooked cake flour, you can use glutinous rice flour instead.
