Tangerine Peel and Red Bean Paste Filling (suitable for Moon Cakes, Egg Yolk Crisps)

Soak the red beans in water one night in advance. I put it in the refrigerator in this weather.

Soak the tangerine peel in warm water half an hour in advance the next day.

Wash the soaked red beans two or three times, together with the soaked tangerine peel and water, pour into the Joyoung cooking machine, add water about 1 cm higher than the red beans.

.Start the iron kettle rice mode and cook the red beans.

This is a cooked red bean, very soft and rotten.

While hot, pour the white sugar, maltose, and peanut oil into the red beans.

Stir until the sugar melts.

Take out half of the tangerine peel, then use a wall breaker to beat the red beans finely, and then pour the red bean paste back into the pot.

Remember to install a stirring paddle on the cooking machine.

Feel free to start a cooking mode, I use the 7-minute gear.

This is red bean paste that has been fried for 7 minutes.

.Continue to start the stir-frying mode. After stir-frying for about 4 minutes, when it reaches this thick state, start to turn on the stir-frying machine every 1 minute or so. Scrape the bean paste at the bottom with a spatula to prevent the bottom from being burnt. In the last two or three minutes, check the state of the bean paste a little bit more diligently.

Stir-fry until the red bean paste is held together, not sticking to the spatula, as shown in the picture. I spent about 15 minutes in total.

The prepared tangerine peel and red bean paste are sealed with plastic wrap, and can be placed in the refrigerator after cooling to room temperature. The final product is about 700g.

The prepared bean paste is made into moon cakes, which is superb.
Tips:
1. If there is no cooking machine, use a non-stick pan to fry, remember to keep stirring.
2. Soaking red beans in advance makes it easier to cook.
