Tender and Smooth Oyster Omelette

Add milk and cooking wine to the oysters, marinate for one hour, to remove fishy and fresh.

Rinse the marinated oysters, then put them in boiling water, and remove them after 30 seconds.

Beat two eggs into the bowl with one hand, use the strength of your biceps and forearms to quickly break the eggs with chopsticks until bubbles appear.

Add in, salt, fish sauce, (because I am in Japan, I use Japanese つゆ instead, it tastes the same), starch, and broth. Cut the leeks into small sections, stir and mix well.

Heat the pot, add oil, and pour the mixture of eggs, oysters and chives. After one side is cooked, turn it over, heat for 30 seconds and turn off the heat. Use the remaining heat of the pot to heat the other side to keep the sweetness of the oysters and the tenderness of the eggs to the greatest extent.
