Tiramisu Pudding Cup
1.
Prepare all the ingredients, with more varieties; divide the masala wine into 2 portions in advance, each 15ml; cheese must use mascarpone, otherwise it will not be authentic tiramisu; finger biscuits can be bought ready-made, You can also make it yourself. Considering the low output of household ovens, especially baking biscuits, which are not very practical, it is recommended to buy ready-made ones.
2.
Making coffee wine sugar liquid: 4g black coffee powder into the container, add 35ml warm water, 10g white sugar, stir well and melt
3.
After cooling enough, add a portion of masala wine and mix well, the coffee wine sugar liquid is complete
4.
Make cheese paste: pour egg yolk, milk and 50g white sugar into the container
5.
Pump and stir by hand until fully integrated
6.
Separate the hot water of about 80 degrees, heat it on a small fire and keep stirring until it becomes a thick milky foam (pictured)
7.
Take it out of the hot water, quickly put it in cold water and continue to stir and cool down until it becomes thicker (as shown in the picture). It must reach the consistency shown in the picture. The dripping will leave traces for a short time. If it is very thin, it is very likely The egg yolk is not fully cooked, you can reheat it
8.
After cooling sufficiently, add another part of masala and mix well
9.
The mascarpone cheese is beaten with an electric whisk until smooth and no particles (pictured)
10.
Add the mixture from step 8 to the cheese
11.
Stir it with an electric whisk until it is even and fine. The mixture should be very thick and can maintain the texture for a short time (as shown in the picture)
12.
Whip the whipped cream until it can maintain a clear texture, with a little fluidity (as shown in the picture), put the whipped cream in the refrigerator in advance, and operate immediately after taking it out. It is easier to whip at low temperatures.
13.
Pour the mixture from step 11 into the whipped cream
14.
Stir it with a spatula until it is completely mixed and uniform, and the cheese paste is completed. The qualified cheese paste should be very thick and can maintain the texture for a long time (as shown in the figure). If it is thinner, it can be placed in the refrigerator for 15 minutes. Make it thick, convenient for subsequent operations
15.
Assemble the Tiramisu Cup: Break 1 finger biscuit into 3 sections
16.
Quickly dip both sides in the coffee wine sugar liquid
17.
Put it into the bottom of the pudding cup
18.
Put the disposable piping bag on a large-mouth cup of suitable depth (as shown in the picture), so that you can easily put the paste into it by yourself
19.
Fill in the right amount of cheese paste, not too full
20.
Lift the piping bag, tighten the opening, and cut a small opening at the front end
21.
Slowly squeeze the cheese paste into the pudding cup, filling the gap as much as possible
22.
Squeeze the cheese paste to half the height of the cup, and put a layer of finger biscuits dipped in coffee wine.
23.
Continue to squeeze in the cheese paste until it is 9 minutes full, pick up the cup, place a soft cushion, and shake the case a few times to produce large bubbles and flatten the surface
24.
Cover the lid, why should it be squeezed to 9 minutes full? Because if it is full, it will stick to the lid
25.
The ingredients in the recipe just made 5 cups of Tiramisu, which is really just right. I admire myself! I use a large pudding cup with a height of 7.5 cm, a diameter of 6.5 cm, and a maximum volume of 200 ml. The size is very suitable; you can use any cup you like, whether it is glass or plastic, as long as it is transparent; but don’t Use a cup that is too big, it doesn’t look delicate
26.
Put it in the refrigerator for more than 4 hours. You can do more at a time and keep it in the refrigerator. Because the container has a lid, the tiramisu will not change its flavor and can be stored for at least 3 days
27.
Spread a layer of cocoa powder on the surface evenly before eating, and the tiramisu pudding cup is complete!
28.
Scoop a spoonful to taste, is it tempting, the fragrance bursts out all of a sudden!
Tips:
1. The cheese paste must remain thick, otherwise it will flow from the mouth of the piping bag everywhere and cannot be operated;
2. Don't soak the biscuits in the coffee wine for a long time, otherwise the two biscuits can soak up all the coffee wine, and they are too soft to take out;
3. Sift the cocoa powder before eating to prevent the cocoa powder from being damp and discolored, which will affect its appearance.
