Tofu and Shiitake Mushrooms

Cut the tofu into suitable size cubes, put some salt on the surface, and marinate for two minutes; spread a thin layer of cornstarch on the surface of the tofu

Fry in a pan until golden on both sides, remove and set aside; put a little oil in the pan, add pork belly and stir-fry until deep-fried and stir-fried, and the surface is slightly yellowed

Add appropriate amount of soy sauce, rock sugar and stir fry together for color; pour in appropriate amount of boiling water, add star anise, cinnamon, ginger and shallots together, cover and cook for a quarter of an hour

Then pour in the prepared tofu cubes and shiitake mushrooms, cover and cook for ten minutes; add appropriate amount of salt and pepper, and collect the juice over high heat
