Tofu Brain

Weigh 120 grams of organic soybeans and wash. My small tank is filled with exactly 120 grams. You can also find a suitable container and use the container to measure it. Next time, use this container to measure it.

Soak the washed soybeans in clear water overnight, soak until the hair rises completely.

Add the soaked soybeans to the food processor, pour half of the water, and start to grind.

Take clean medical gauze, fold it into double layers, and spread it on a clean container.

Pour the ground soy milk into a container covered with gauze, lift the gauze around, and squeeze out soy milk with both hands.

Pour the remaining small amount of bean dregs back into the cooking machine, add the remaining clean water, and grind again.

The ground soybean milk is also filtered into the pot with gauze, and all the soybean milk in the pot is filtered through the filter and poured into the pot.

Bring to a boil, boil on medium heat for more than 5 minutes. This process cannot be separated from people, soy milk is very easy to boil out of foam and overflow out of the pot. It is necessary to closely monitor and stir soy milk from time to time.

Prepare a clean container and put 5 grams of glucose lactone.

After the soy milk is cooked, turn off the heat and cool for 30 seconds to 1 minute. Then pour the soy milk into the container prepared in step 9. When pouring the soy milk, pour it from a height of about 30 cm from the bottom of the container, cover it and let it stand for more than 5 minutes.

Wash the garlic cloves and mash them with a little salt.

Wash the coriander and cut into small sections, wash the shrimp skin and put it into a small bowl, pour in soy sauce, vinegar, garlic paste, a little cool boiled water, drop in sesame oil and mix well.

After preparing the seasoning, the tofu brain can be formed, about 5 or 6 minutes. Use a flat spoon to gently lay out the tofu brain, pour the seasoning, drizzle a little chili oil, and start eating.
Tips:
The tofu made by filtering the soy milk twice will be smoother and tender. Soy milk made with 1500ml water can be consumed by three people. You can adjust the amount of water and beans according to your family. For the beans, it’s best to use the non-GMO soybeans made in China, which are given by my relatives with a little bean skin.
