The first time I ate bean curd fish, I went to Chengdu, Sichuan, to visit my daughter who was studying there. My daughter took us to the roadside restaurant next to the school. We were seated for a while, only to see a plate of red dishes on the table. First pick up a piece of fish fillet. The fish fillet should be grass carp. It feels tender when clamped on chopsticks. I can't wait to send it into my mouth. It is so tender and smooth! It didn't feel very spicy! Here comes another spoonful of bean curd, the sweet and tender bean curd is wrapped in the juice mixed with the fragrant fish slices, it is so delicious! So that after I come back, I will think of its taste for a long time! Today I made the tofu fish with the recipe of Teacher Kong at home. I used black fish fillets and tofu with internal fat. I followed the recipe step by step. When I put the fish fillets with the red soup into the pot with bean curd, I used black fish fillets and internal fat tofu. Sprinkle with chopped green onion, minced garlic, red pepper, peppercorns and cumin powder, and finally drizzle with a large spoonful of hot oil. However, the mixed scent is tangy! The whole person is so excited! It turns out that it's really not difficult to make bean curd fish at home!

Tofu Fish

1. Cut half a carrot, half an onion, 2 green and red peppers, a little celery, green onion, ginger and garlic.

2. Put the fish fillets into a large bowl, add cooking wine and a little salt, and grasp it in one direction, about 3 minutes, until the fish becomes sticky.

3. Then pour in half of the egg white and continue to grab it with your hands, about 2 minutes

4. Finally, add a little cornstarch to make it evenly so that the fish is coated with starch

5. I use the internal fat tofu sold outside. Although it doesn’t have the fragrance of tofu made by myself, it’s convenient.

6. Put the internal fat tofu in a pot, blanch water and remove it for later use

7. In a frying pan, sauté star anise and pepper

8. Then add in the sliced garlic, ginger, green onion and celery and stir fry to get a fragrance

9. Pour in the sliced carrots, green peppers and onions and sauté until fragrant

10. Then add a spoonful of bean paste and continue to stir evenly

11. Add half pot of hot water to boil

12. After the soup is boiled, add some light soy sauce

13. Add a small piece of hot pot base and cook for about 2 minutes. Friendly reminder that the hot pot base can be bought in the condiment store outside. I was at the small shop in the vegetable farm and bought a pack of red soup hot pot base.

14. Use a strainer to remove the side dishes and seasonings from the pot and discard them

15. The rest is the red soup we want

16. Quickly put the marinated fish fillets into the pot one by one and cook for 1 or 2 minutes. When the fish fillets become discolored, they will be cooked. Turn off the heat.

17. Put the bean curd on the bottom of the pot

18. Pour the fish fillets and red soup together

19. Sprinkle with chopped green onion, minced garlic, red pepper, diced pepper and cumin powder

20. Finally, drizzle with a tablespoon of hot oil and sauté until it is finished

Tips:

1. For fish fillets, you can use grass carp or black fish. If you are good at cutting it, you can go home to fill it yourself. If you don’t know how to use it, let the fish seller help. In fact, I recommend using Longliyu and Pangasius. It is convenient and delicious.
2. If you kill fish at home to get fish fillets, then fry the head and tail of the fish in a frying pan, add water to stew a stock, and then use this fish soup to cook the red soup, it will be more delicious
