Tomato Noodles

Wash the tomatoes and leave two or three thin slices of the tomatoes, and chop the sour radish into shreds. Take warm water and soak the minced garlic into garlic water (soak the garlic more for a stronger flavor)

Chopped ginger, pickled pepper and millet pepper, chopped green onion, chopped green onion

Boil water in a pot to boil the noodles

After the noodles are cooked (not too cooked), pick up the noodles in cold water, then drain them evenly, smear them with sesame oil, and put them in a bowl for later use.

Stir ginger with hot oil in a pot, add crushed tomatoes, stir fry over low heat, and add the tomato sauce

Add a bowl of water, a spoonful of pickled pepper water, a spoonful of bean paste, and half a spoon of chilli sauce. After boiling, add millet pepper pickled pepper and half of the chives, stir fry for a minute or two, then pour the sauce on the oiled noodles

Mix well with the seasoning, pour the soaked garlic water and minced garlic, put on the tomato slices and sour radish, chives and shrimp skins.
Tips:
The noodles cannot be overcooked. The tomatoes can be peeled first, or you can add some iced water and salted eggs.
