I think this salad is just like summer, colorful and beautiful, and not high in calories, very delicious!

Tomato Quinoa Salad

1. Rinse the quinoa with water and soak for 10 minutes, then cook;

2. In the process of cooking quinoa, wash the vegetables you need and control the moisture;

3. After the quinoa is cooked, let it cool;

4. Boil the Arctic shrimp with boiling water and let cool;

5. Mix cream cheese, salad dressing, apple cider vinegar, crushed black pepper and sea salt and mix well to make a sauce;

6. Cut small tomatoes, lettuce, purple cabbage, and cooked eggs;

7. Put the chopped small tomatoes, lettuce, purple cabbage, boiled eggs and Arctic shrimp into a cooking bowl, and mix well;

8. Sprinkle the quinoa in a bowl and mix in the prepared salad dressing.

Tips:

1. There are many colors of small tomatoes, add some for each color;
2. Basically cook the quinoa for 15 minutes, don't cook it for a long time;
