Wash the toon sprouts, put a small amount of salt in boiling water, put the toon sprouts in the water, blanch them, and pick them up immediately;

Squeeze the toon and chop finely, and chop the green onion into finely pieces;

Beat the eggs, chopped toon, chopped green onion, salt, dry starch and 1 teaspoon plus 1 teaspoon to hydrate, add to the egg liquid and stir well;

Heat the pan, spray an appropriate amount of oil (so that the entire bottom of the pan is covered with oil), pour the egg liquid, turn the pan to spread the egg liquid evenly on the bottom of the pan, turn the heat to low, and fry for about 10 minutes. Tips:
1. Before eating toon, it is best to blanch it with boiling water to remove the astringency and the nitrite contained in toon.
2. Toon should be eaten before Guyu. Toon leaves become old after Guyu, and the taste and nutritional value will be greatly reduced.
