Toon Scrambled Eggs

A small handful of toon, two eggs, and two sharp peppers (the sharp peppers I chose are not very spicy and have the effect of enhancing flavor).

After beating the egg liquid in a bowl, add the chopped toon and hot pepper, and add salt at the same time.

Add oil to the hot pan, about 80% cooked, add the egg mixture.

The toon and chili are chopped into smaller pieces, so they can be cooked after a little stir-frying.
Tips:
1. It is more suitable to take the toon tooth from March. The tenderer the toon tooth, the better the nutritional value and the more fragrant taste.
2. After the toon eggs are fried, I use Shandong coarse grain pancake rolls. It is really an authentic farmhouse delicacy, simple and delicious.
