Weigh the flour according to your needs. I have 170 grams here and can make 5 biscuits.

Gradually add warm water. The amount of water in the formula is for reference. The water absorption of different flours is different.

Make it into a wet dough and knead it roughly into a dough. Cover with plastic wrap and wake up for more than half an hour.

The time to wake up the dough can be used to prepare toon. Wash fresh toon.

Bring water to a boil, add a spoonful of salt, add toon and blanch until the color changes.

Remove the cold water and set aside. I actually only used half of the toon here, about 80 grams. The rest is used for cold dressing.

Squeeze the excess water from the toon and chop it for later use.

Season toon with a little salt and sesame oil for later use.

Take out the good dough and knead it into long strips and divide them into five equal parts, each about 60 grams.

Apply a layer of oil evenly to the rectangular dough sheet of Gancheng.

Spread an even layer of toon.

Roll up from top to bottom, pinch tightly at the closing.

Roll up spirally and pinch tightly. Put the rolled dough aside to wake up.

After the pie is made into a spiral shape, start to preheat the electric pie file, and then press the spiral shape of the pie in sequence with the base of the palm, and press it into a thin and even pancake shape.

Brush a layer of oil on the preheated electric baking pan.

Put in the finished pie, cover and fry until the skin is golden.

Turn it over and fry until golden brown. If you are not sensitive to oil, you can use frying, the color will look better, and the taste will be more fragrant; if you are afraid of oil, you can dry it directly.
