Tremella, Red Dates and Lotus Seed Soup

Soak the dried white fungus in cold water until it expands, remove it, trim off the stalks, peel off the small flowers, wash and drain, and set aside.

Take a pottery pot, pour water to boil, add method 1 white fungus, fresh lotus seeds and red dates without seeds, cover the pot and cook for about 20 minutes. Add the longan meat and cook for 10 minutes, add rock sugar and mix well, turn off the heat, cover the pot and simmer for 10 minutes.

Tips:
If you don't have fresh lotus seeds, you can replace them with 100g dried lotus seeds. Before cooking, soak in warm water for about 1 hour, and then pick out the lotus heart with a toothpick, otherwise the lotus heart will taste bitter.
