Trotter, Lotus Root and Asparagus Soup
1.
Soak the soybeans overnight.
2.
100 grams of soybeans and 1200 milliliters of water, this time because of the soup, so the soy milk is more ground this time. I usually make more at a time, and put it in a bottle like the picture in the picture after it’s allowed to cool. Drinking iced soy milk tastes good in summer. It is also very convenient to take out the soup when it is used.
3.
Wash the trotters and chop them into small sections, wash and set aside. Cut the asparagus into diagonal sections, blanch in boiling water for 2 minutes, remove and set aside, peel the lotus root and cut into large pieces.
4.
Fill the wok with water, add the washed trotters, some cooking wine and a few slices of ginger. After boiling, remove the trotters and set aside.
This step is very necessary. As long as it is meat, it will be boiled at high temperature. This step can remove the boiled water.
5.
Pour appropriate amount of soy milk, trotters, freshly cut ginger slices, and lotus root pieces into the pressure cooker.
6.
There are tendons in the pressure cooker. When you choose 30 minutes, the trotter will be softer. Add the right amount of salt according to the taste. Then add the asparagus, because the asparagus has been blanched and fully cooked, so use the hot soup to make the asparagus taste quickly.
