I have always liked to eat yellow croaker, with little bones and fresh meat, combined with the Sichuan bean paste to make this Douban yellow croaker.

Watercress Yellow Croaker

1. Wash the fish, chop garlic, slice ginger, and mince Pixian bean paste.

2. Add oil to the pot, add ginger slices and stir fragrant after heating.

3. Put the fish in the pan, fry it on one side, turn it over and fry on the other side, and fry until both sides are slightly golden brown, and set aside for later use.

4. Add oil to the pot again, add garlic and bean paste and stir-fry in turn.

5. After sautéing, add a small bowl of water to the pot, then pour soy sauce and white wine, add the fried fish after the water is boiled, turn to a low heat and cover the pot to cook the fish.

6. After about 10 minutes of cooking, place the lid on the plate.

Tips:

When cooking the fish, be careful not to boil it dry, and you can add some water appropriately.
