White Soup Rice Noodles

The key point for the fat intestine powder is the soup stock: pig heart, fat intestine and pork bones are used, and if possible, pork lungs can be cooked together. Soak the pig's heart in cold water for 2 hours, rub it, and squeeze out the blood. After 2 hours, the surface of the pig's heart has turned white.

Cut it from the middle and slice it.

Rinse the cut pig's heart in cold water several times and remove it for later use.

Soak the pork bones in clean water for 30 minutes to remove excess blood and set aside.

Treatment of fat intestines:
The excess fat can be peeled off, add white vinegar, knead, and wash. It is best to wear gloves when handling fat intestines.

Add a spoonful of flour and continue to knead. Wash it up.

Finally, pour some cooking wine, knead and wash.

Put the ribs in cold water with ginger slices, a little pepper and cooking wine, bring to a boil over medium heat, remove, rinse with warm water, and set aside.

Cut the fatty intestines into sections, add ginger slices, a little pepper and cooking wine together with the pig's heart. Bring to a boil over medium heat, remove, and rinse with warm water.

Add all the soup to the deep pot, add the mashed glutinous rice juice, a small piece of ginger and a small handful of whole white pepper diced, add enough boiling water, and boil for 30 minutes on high heat. This step can emulsify the fat and protein. It is a boil. The key to milk soup.

After 30 minutes, the color of the soup has reached this level. Turn to the lowest heat and cook until the fatty intestines and pig's heart become soft. It takes about 4-6 hours.

Crispy soybeans: Soak the soybeans overnight for more than 10 hours, filter water, add a pinch of salt and baking soda to the water and soak for 15 minutes, filter the water, add cold oil, and keep it deep fried at medium heat.

It is very convenient when you do the pre-preparation work: as shown in the picture, prepare a bowl of old hot soup, bean sprouts, sweet potato vermicelli soak overnight, as well as coriander and shallots, crisp soybeans, sprouts/rutabagas/ mustard greens.

Seasoning at the bottom of the bowl: minced ginger, minced garlic, salt, a large amount of Chinese pepper powder (about half a tablespoon), a pinch of pepper, add spicy oil to it.

Bring the soup to a boil, add bean sprouts and soaked vermicelli, and cook.

Put the bean sprouts and flour in a bowl, pour the soup, put the sausage and pork heart slices, sprinkle dried soybeans, chopped green onion, coriander, sprouts/rutabagas/shovel mustard, and pour sesame oil.
