Winter Melon and Mushroom Soup

Soak dried shrimps in water 20 minutes in advance to soften.

Slice the lean meat, add some pepper, cornstarch, and peanut oil and marinate for ten minutes.

Peel the winter melon and cut into thin slices.

Slice ginger, cut green onion into sections, wash fresh mushrooms and cut into pieces.

Add bottom oil to the pot, add dried shrimps, ginger, and green onions to sauté until fragrant.

Add fresh mushrooms and stir fry a few more times to soften.

Add proper amount of water to the pot at once, boil the winter melon slices and cook for 3-5 minutes.

Finally, add the meat slices and cook, add salt and chicken essence.

Tips:
1. Add pepper and peanut oil when marinating meat slices to increase the flavor and tenderness. The meat slices can be cooked in the pot for a short time and should not be too long.
2. Put the dried shrimps into the pot and fry them with oil, so that the cooked soup will have a richer taste.
