Winter Melon and Scallop Soup

Peel the winter melon and cut into large slices.

Soak dried shiitake mushrooms in water.
3.
Peel and slice carrots.
4.
Wash the scallops and soak in water.
5.
Wash the soaked shiitake mushrooms.
6.
Wash and shred the basil leaves.
7.
Add oil to the pot and stir fragrant carrot slices.
8.
Add the winter melon slices.
9.
Add shiitake mushrooms, scallops (along with the water for soaking the scallops) and water.
10.
After the water is boiled, add shredded perilla, turn off the heat and simmer for about 20 minutes.

Add black pepper.

Just add salt before turning off the heat.
