Winter Melon Duck Soup

Izumi, barley, eyebrow peas, tangerine peel, and ginger peel are soaked and washed.

After the tangerine peel is soaked softly, scrape off the white leather coat with a knife.

Cut the winter melon in large pieces.

Cut corn into sections.

Duck chopped into pieces.

Put an appropriate amount of water in the pot and add all the ingredients (except duck, chicken feet, winter melon, and yuba).

After the water is boiled, continue to cook for about 30 minutes, then add winter melon and duck meat; continue the electric soup pot for two hours.

Soak clean yuba.

Put the yuba in the soup and continue boiling for about 30 minutes.

When drinking, add salt according to personal preference.

1. Put the yuba at the end; put it early and it will be boiled.
2. The cooking time for corn and beans will be delicious, so put them at the earliest. The winter melon and meat can be put in the soup after boiling.
3. Chicken feet and corn are optional, I personally think that the soup will be sweet.
4. The salt should be put at the end. Generally, fresh meat is rich in protein. If salt is added too early when cooking, the protein will coagulate.
