Winter Melon Lao Duck Soup

The ducks are cleaned, chopped into pieces, and cleaned.

Put the duck meat into the pot, add water that can submerge the duck meat, and bring to a boil on high heat.

Remove the duck meat and drain the water.

Take a casserole, add enough water (about 3 liters), bring to a boil over high heat; add the duck meat and boil again, reduce the heat to simmer for 2 hours.

Peel the winter melon and cut into small pieces.

Turn the duck soup of "Step 5" into high fire and add winter melon.

Bring to a boil again, turn to medium-low heat and cook for a while. When the winter melon is boiled a bit transparent, add salt to taste.

Turn off the heat and eat in a fashionable bowl.
Tips:
If it is boiled with fresh lotus leaves, wash the lotus leaves and cook the duck meat first. The function of lotus leaves is to clear heat and promote dampness.
This soup is used for family dinners in my family. The portion is quite large. Small families can reduce the amount of ingredients according to their discretion.
