Yellow Bone Fish Tofu Soup

Kill the yellow bone fish, clean it, drain it and set aside; rinse the tofu and cut into pieces for later use; wash and cut the chives, and pat the ginger loose for use.

Put the oil on the heat, add the yellow bone fish, fry the yellow fish on one side, turn it over and fry the other side.

Add ginger slices and pour in enough boiling water.

Bring to a boil and continue to cook for a while until the soup turns white, add tofu and cook for about ten minutes.

Add pepper.

Season with appropriate amount of salt and sprinkle with scallions.
