Yellow Croaker

Prepare raw materials;

Put a flower knife on the surface of the fish, then spread a layer of salt and add an appropriate amount of cooking wine to marinate;

Use kitchen paper towels to soak up the water on the surface of the fish;
4.
Put an appropriate amount of oil in the pot, add yellow croaker and fry;
5.
When the two sides of yellow croaker are fried until the surface is golden, it will be served;

Heat the pan, add an appropriate amount of oil, and add the minced ginger;

Add minced meat and stir fry;
8.
Stir-fry the minced meat and stir-fry it with pickled vegetables;
9.
Add the fried yellow croaker, pour in the right amount of cooking wine, light soy sauce and the right amount of water;

Cover and simmer for two or three minutes;
11.
Turn the fish over in the middle and add some salt to taste;
12.
Finally, heat up the juice and add diced red pepper;
13.
Serve into the plate.
Tips:
1. Add salt and other seasonings to marinate the yellow croaker. Before frying the fish, absorb the water on the surface of the fish, so that the skin is not easy to damage when frying. The fish will be fried until golden on both sides before serving.
2. Saute the minced ginger first, then stir-fry the minced pork (diced pork belly is the best). After the minced meat changes color, add the pickled vegetables and stir fry to remove the peculiar smell;
3. Add the fried fish, pour in cooking wine, light soy sauce and appropriate amount of water, cover and simmer for two or three minutes; turn the fish over, and use a spoon to pour the soup on the surface of the fish;
4. Add salt to taste at the end. Don't add salt. The fish gets the bottom taste and the pickled vegetables is also salty. Collect the sauce over high heat. Add some diced red pepper before serving. You can also leave it out for garnish.
